Who we are

Eveleen [640x480]Fabulous Food Trails business partners Eveleen Coyle and Pamela Coyle live in Ireland and love their food. They come from a long family tradition of good fare and big family meals. What’s fresh, what’s local and what’s in the larder dictate the menu, never the numbers. They believe food is one of the great pleasures in life, to be enjoyed in an atmosphere of warm hospitality.

With a background in book publishing, writing and editing, their style is both creative and personal. With close attention to detail, they will make sure your trip is informative, relaxed, memorable and a lot of fun.

In their publishing careers both Eveleen and Pamela have worked with many famous chefs and food writers including Darina and Myrtle Allen, Conrad Gallagher, Colin O’Daly and Paul Cartwright of Roly’s Restaurant, Maureen Tatlow, Georgina Campbell and Michael Van Straten.

Eveleen wrote her own book the Irish Potato Cookbook. Among the books she commissioned are the Irish Cooking series on Eggs, Oatmeal, Soups & Breads, Baking and Family Food. Good Enough to Eat?, The Healthy Food Directory, What to Eat When You Can’t Eat Anything, The Hidden Gardens of Ireland, Native Trees and Forests of Ireland, Nature’s Cure and Alternatives to Antibiotics.

Roisin Fallon is the Fabulous Food Trails chief guide for our Dublin Tasting Trail.

Roisin’s curiosity about and passion for good food goes back to her childhood when her whole family were involved in the food industry.  She went on to work in food and tourism here in Ireland, and spent a number of years as a tour guide in Europe, mainly in Spain and Italy.  Roisin has worked as an advisor on many food projects including the setting up of the wonderful Fallon & Byrne in Exchequer Street in Dublin and of course, on the Dublin Tasting Trail.  As well as working with Fabulous Food Trails, Roisin also works in The House Restaurant-Howth.
